Maple Glazed Salmon

It’s a Friday in Lent, and since I’m (sort of) a good Catholic, I’ll be going meat-free. Thank goodness for delicious Maple Glazed Salmon, which always turns out perfectly! I honestly think I’ve made this recipe over 100 times, and have never been disappointed with the results. It’s easy, quick and delicious! The perfect sides: roasted sweet potatoes and a baby green salad. YUM!


INGREDIENTS

1/4 cup maple syrup
2 tablespoons soy sauce
2 cloves garlic, minced
pinch ground black pepper
1 pound salmon (fillets work best)

DIRECTIONS

In a small bowl, mix the maple syrup, soy sauce, garlic, and pepper.

Place salmon in a shallow glass baking dish, and coat with the maple syrup mixture. Cover the dish, and marinate salmon in the refrigerator 30 minutes, turning once.

Preheat oven to 400 degrees F. Place the baking dish in the preheated oven, and bake salmon uncovered 20 minutes, or until easily flaked with a fork. Serves 4.

Broiled Tilapia Parmesan

We’re constantly looking for new ways to incorporate fish into our diet. As it stands, I usually serve up a fillet of salmon or halibut steak – only because that’s what I’m familiar with and shy away from uncharted waters (no pun intended).

But tonight, I’ll be trying this recipe for Broiled Tilapia Parmesan. It received 4.5 stars out of 5 from just under 4,000 reviewers on All Recipes online, so I’m thinking that many people can’t be wrong. If you’re looking for a new way to serve up seafood, why not try it too?

INGREDIENTS

1/2 cup Parmesan cheese
1/4 cup butter, softened
3 tablespoons mayonnaise
2 tablespoons fresh lemon juice
1/4 teaspoon dried basil
1/4 teaspoon ground black pepper
1/4 teaspoon garlic powder
1/4 teaspoon paprika
1/8 teaspoon onion powder
1/8 teaspoon celery salt
2 pounds tilapia fillets

DIRECTIONS

Preheat your oven’s broiler. Grease a broiling pan or line pan with aluminum foil.

In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, garlic powder, paprika, onion powder and celery salt. Mix well and set aside.

Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish. Serves 8.
