We're constantly looking for new ways to incorporate fish into our diet. As it stands, I usually serve up a fillet of salmon or halibut steak - only because that's what I'm familiar with and shy away from uncharted waters (no pun intended).But tonight, I'll be trying this recipe for Broiled Tilapia Parmesan. It received 4.5 stars out of 5 from just under 4,000 reviewers on All Recipes online, so I'm thinking that many people can't be wrong. If you're looking for a new way to serve up seafood, why not try it too?
INGREDIENTS
1/2 cup Parmesan cheese
1/4 cup butter, softened
3 tablespoons mayonnaise
2 tablespoons fresh lemon juice
1/4 teaspoon dried basil
1/4 teaspoon ground black pepper
1/4 teaspoon garlic powder
1/4 teaspoon paprika
1/8 teaspoon onion powder
1/8 teaspoon celery salt
2 pounds tilapia fillets
DIRECTIONS
Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil.
In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, garlic powder, paprika, onion powder and celery salt. Mix well and set aside.
Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish. Serves 8.

So the verdict: Pretty damn good fish!
I cut the recipe in half as I didn't need to serve 8, but otherwise followed everything exactly as written. At first I was sketchy on the whole cheese with fish concept, but the parmesan actually had just the right amount of saltiness and flavour. And, because you broil it, the topping was nice and crunchy!
I had seconds, and I'll make it again!
Good to know! I was thinking about the fish/cheese combo too but I've seen it done on The Food Network and figured it's gotta be good when done right. I'll definitely give it a try! Thanks!
