Oh, Banana Republic. Why do you torture me so?

The last time this promo ran, I walked into BR, with the naivety of a school girl, thinking that I could finally buy the BR Monogram Trench Coat (unaware of the regular retail price – $625). When I discovered that even after the discount, I would still have to drop $468.75 for a thin piece of fabric worn more as a statement than for functionality, I was forever robbed of my innocence.

But please don’t feel too bad for me, as I did select several gorgeous sweaters for hubby and myself. And this time around, I’ve got my eye on some of their fun, flirty dresses (of which I’m aware I can generally afford even at regular price)!

This salad is so good, it’s fabulous.

Combining fresh ingredients with a sweet, tangy dressing, you’ll want to have your spinach fix at every meal. And, embarrassingly enough, I can actually recall the morning after I made this salad for the first time – chowing down on wilted leftovers at 9:00am. Since then I’ve learned not to leave leftovers :)

Perfect for entertaining; make sure to keep copies of the recipe on hand, as your guests will certainly be asking for it. It teams up particularly well with roasted chicken or salmon… and I like it with grilled cheese sandwiches too! If you do not have light olive oil on hand you may substitute vegetable oil (but don’t use extra virgin as the flavour will be overpowering). Enjoy!

INGREDIENTS

1 tablespoon butter
3/4 cup almonds, blanched and slivered
1 pound baby spinach
1 cup dried cranberries (or Craisins)
2 tablespoons toasted sesame seeds
1 tablespoon poppy seeds
1/4 cup white sugar
2 teaspoons minced onion
1/4 teaspoon paprika
1/4 cup white wine vinegar
1/4 cup cider vinegar
1/2 cup light olive oil

DIRECTIONS

In a saucepan, melt butter over medium heat. Cook and stir almonds in butter until lightly toasted, about 5 minutes. Remove from heat and let cool. (To toast the sesame seeds, place in a dry pan over medium heat until seeds are slightly browned and aromatic.)

In a large bowl, toss spinach with the toasted almonds and cranberries.

In a separate bowl, whisk together the sesame seeds, poppy seeds, sugar, onion, paprika, white wine vinegar, cider vinegar, and oil. Toss with spinach just before serving. Serves 8.

I’ll come clean – while I’m a fan of Abercrombie & Fitch clothing, I’m a much bigger fan of their young, taut male models. However, taking into consideration their average age (and the fact that I just used the word “taut”), I’d better stick to men born before 1990, thank you very much. Still… mmm…

Isn’t it funny that “summer clearances” now begin more than one month before the official start of summer? Redonkulous!
